Ingredients for 2 servings:
- 200 g mild sheep’s cheese
- 2 small zucchini
- 200 g bacon, sliced
- 4 tbsp sunflower seeds
- 1 bunch thyme, fresh

Cut the feta cheese into approximately 1 x 1 cm cubes. Wash the zucchini, pat dry, and trim the ends. Cut lengthwise into very thin slices. Use a vegetable peeler if desired. Sprinkle the sunflower seeds on each slice of bacon, place a zucchini slice and a cube of feta cheese on top, sprinkle with some thyme, and roll up. Secure each roll with a toothpick and fry in a nonstick pan until crispy. Tip: Serve with a glass of sherry or Cava.
