Carrot and apple salad with spring onions

Ingredients for 2 servings:

  • 200 g carrot(s)
  • 1 large apple
  • 1 spring onion(s)
  • 1 small lemon(s)
  • salt and pepper
  • 2 tbsp oil
  • some erythritol (sugar substitute) or sugar

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Basic

Peel and grate the carrots and apple. Slice the spring onion into rings. Squeeze the lemon and mix the juice well with the prepared ingredients and oil. Season with salt, pepper, and erythritol or sugar. Let stand for one hour.
