Carrot cake with walnuts

Ingredients for 1 servings:

  • 2 ½ cups flour
  • 2 cups sugar
  • 4 eggs
  • 1 cup vegetable oil
  • 4 carrots, grated
  • 1 packet of baking powder
  • 1 packet of vanilla sugar
  • 1 cup walnuts, coarsely chopped
  • 1 tsp salt
  • 1 ½ tsp cinnamon powder
  • 2 cups milk
  • 3 tbsp sugar
  • 1 ½ tbsp cornstarch
  • 2 tbsp syrup (Pekmez – grape syrup)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Turkish recipe – our favorite cake

Beat the eggs and sugar with a hand mixer for 5 minutes. Gradually stir in the remaining ingredients. As the last ingredients, add the grated carrots and the coarsely to finely chopped walnuts (depending on taste). Pour the batter into a dish and bake for 40-45 minutes at 160°C (fan oven). For the glaze, boil 2 cups of milk with the sugar. Remove from the heat and add the cornstarch. Reduce heat to low until a pudding-like consistency forms. Stir in the syrup. Glaze the cake with it and decorate with walnuts. Instead of walnuts, you can also make the cake with ground almonds.
