Ingredients for 1 servings:

  • 125 g butter
  • 125 g sugar
  • 1 pack flavoring (lemon sugar)
  • 1 dashes lemon juice or
  • some lemon peel, untreated, grated
  • 3 eggs
  • 250 g flour
  • 3 tsp, leveled baking powder
  • 2 tbsp milk
  • n. B. Food coloring (yellow, green, blue, red), liquid
  • Paper cups

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

without jelly, makes 12 pieces

Makes 12 muffins. Cream the butter with the sugar, lemon sugar, and grated lemon zest or a splash of lemon juice until light and fluffy. Beat in the eggs, one at a time. Mix the flour with the baking powder and fold into the mixture. Finally, stir in the milk. To give the rainbow muffins their rainbow look, divide the batter into 4 equal portions. Add yellow food coloring to the first portion, red to the second, blue to the third, and green to the fourth. Mix well again, then layer the colored batters in the desired color order on a muffin tin with muffin cups and bake in a preheated oven at 180°C for 20-25 minutes. If you want to decorate them, let them cool down first. The sky’s the limit. Icing, chocolate coating, or whipped cream all work well.
