Carrot noodles

Ingredients for 6 servings:

  • 2 tbsp butter
  • 2 onions
  • 1 kg carrot(s)
  • 750g spaghetti
  • 2 cups sour cream
  • 2 cups of cream
  • 200 ml broth
  • 4 tbsp curry
  • oregano
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Finely chop the onions. Peel the carrots and slice them lengthwise into thin strips. Cook the spaghetti. Sauté the onions in butter in a wok, add the carrots, and cook until al dente. Sprinkle with curry powder and pour in the cream, sour cream, and broth. Season to taste with oregano, salt, and pepper (go ahead and season generously, as the pasta absorbs a lot of the flavor later). Drain the cooked spaghetti, add it, and toss to combine.
