Carsten's Cashew Mustard

Ingredients for 1 servings:

  • 150 g mustard seeds, yellow
  • 50 g mustard seeds, brown
  • 10 grains of allspice
  • 2 tbsp fried onions
  • 300 ml vinegar (wine vinegar)
  • 200 ml water, or a little more if needed
  • 200 g cashew nuts, roasted and salted
  • 75 g sugar
  • 4 tsp salt
  • 2 tsp garlic paste (recipe in profile)

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

Grind the first four ingredients in a coffee grinder, as finely as possible. Blend the remaining six ingredients with a hand blender until they form a smooth, thin paste. Add the ground ingredients and blend until smooth. Blend with a hand blender until smooth. Add a little more water if needed. Let stand uncovered overnight—oxidation and fermentation will develop the spiciness. Pour into prepared jars and seal.
