Ingredients for 1 servings:
- 150 g mustard seeds, yellow
- 50 g mustard seeds, brown
- 10 grains of allspice
- 2 tbsp fried onions
- 300 ml vinegar (wine vinegar)
- 200 ml water, or a little more if needed
- 200 g cashew nuts, roasted and salted
- 75 g sugar
- 4 tsp salt
- 2 tsp garlic paste (recipe in profile)

Grind the first four ingredients in a coffee grinder, as finely as possible. Blend the remaining six ingredients with a hand blender until they form a smooth, thin paste. Add the ground ingredients and blend until smooth. Blend with a hand blender until smooth. Add a little more water if needed. Let stand uncovered overnight—oxidation and fermentation will develop the spiciness. Pour into prepared jars and seal.
