Cauliflower with Minced Meat and Tomato Sauce

Ingredients
 

  • 1 Cauliflower fresh
  • 500 g Mixed minced meat
  • 125 g Diced bacon
  • 1 Onion
  • 1 Red pepper
  • 2 Green peppers
  • 2 Cans Chunky tomatoes
  • 2 Cans Tomato paste
  • 350 ml Meatsoup
  • 4 tbsp Crème fraîche with herbs
  • 3 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 2 tbsp Salt and pepper
  • 2 tsp Rose paprika powder
  • 0,5 bunch Parsely

Instructions
 

  • Clean and rinse cauliflower and cut the stalk crosswise. Peel and dice the onion. Halve the pepper, remove the core, rinse and dice. Cut the peppers lengthways, remove the seeds, rinse and also dice. Rinse the parsley, shake dry and chop.
  • Bring water to the boil in a large, wide saucepan, lightly salt, add lemon juice and cover the cauliflower in it over low to medium heat for about 30 minutes. The cauliflower should still have "bite".
  • Heat the olive oil in a large pan, leave out the bacon cubes and fry the minced meat in it until crumbly. Add onion cubes and cook until translucent. Add the diced pepperoni and paprika and fry a little. Add a little tomato paste and toast it lightly. Dust with paprika powder. Pour in the tomatoes, juice and broth. Stir everything and simmer covered for 20 minutes over a low heat.
  • Season the minced meat tomato sauce with a little salt and pepper.
  • Lift the cauliflower out of the cooking stock, quarter it, serve with the minced meat and tomato sauce and pour some crème fraîche and the freshly chopped parsley on top.
