  • 3 melons (Charentais)
  • 100 ml sherry or port wine
  • ½ tsp citric acid
  • 500 g gelling sugar, 3:1

Homage to a French appetizer

Charentais melons are those with dark orange flesh. The melons are peeled, yielding approximately 1.5 kg of pure pulp. This is cut into pieces and pureed with a hand blender, then mixed with the citric acid and sugar. Let it steep for about 1 hour. Bring the pulp to a boil and simmer for 4 minutes, remove from the heat, and stir in the sherry or port. Immediately pour into jars, seal, and turn upside down.
