Cheese and Mandarin Sheet Cake

Ingredients for 1 servings:

  • 300 g flour
  • 2 tsp baking powder
  • 200 g margarine or butter
  • 125 g sugar
  • 3 eggs
  • 1 kg low-fat curd cheese
  • 230 g sugar
  • 2 tsp oil
  • 3 packets of vanilla sugar
  • 4 egg yolks
  • 250 ml cream
  • 1 pack of ready-made cheesecake mix (cheesecake aid)
  • 4 egg whites, beaten stiffly
  • 3 can/n tangerines
  • 2 packs of cake glaze, light

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Mix all the ingredients for the batter and spread evenly on a baking sheet lined with parchment paper. For the cheese mixture, beat the egg yolks until frothy, then stir in the remaining ingredients, except for the stiffly beaten egg whites. Finally, fold in the beaten egg whites. Spread the mixture on the unbaked base. Then scatter the drained mandarins over the cheese mixture. Bake the cake in a preheated oven at 160°C (320°F) for 45 minutes. Remove the cake from the oven and let it cool. Finally, prepare the glaze according to the instructions and spread it on the cake, then refrigerate.
