hearty and filling

Clean and peel the carrot as usual. Use a vegetable peeler to peel the carrot into thin strips. Blanch these strips in boiling salted water for 3 minutes, drain over a sieve, rinse with cold water, and drain well. In a small bowl, mix both cheeses with the chives and season with salt and pepper. Lightly toast the bread slices and spread with the cheese mixture. Place the ham on one slice of bread, arrange the carrot strips on top, and season lightly with pepper. Cover the carrots with the second slice of bread and cut the toast diagonally in half. Arrange the sandwich on a platter, garnish, and serve.
