Brown the minced meat in a large pot. Slice the leek lengthwise, cut it crosswise into small pieces, and rinse it thoroughly in a sieve. Peel the onion and chop it into small pieces. Add the leek, onion, and mushrooms to the minced meat and pour in the boiling broth. Melt the cheese in the soup and bring to a boil briefly. This soup goes well with baguette. It also tastes great reheated.
