Cheese Spaetzle with Meatballs
The perfect cheese spaetzle with meatballs recipe with a picture and simple step-by-step instructions.
spaetzle
- 500 g Flour
- 5 piece Eggs
- 250 ml Warm water
- 1 tbsp Liquid butter
- 1 tsp Salt
meatballs
- 500 g Mixed minced meat
- 1 tbsp Hot paprika powder
- 1 tsp Oregano
- 2 tbsp Olive oil
- 1 piece Bread roll (previous day)
- 1 piece Egg
- Salt pepper
sauce
- 500 ml Milk (whole milk)
- 200 ml Cream 30% fat
- 200 g Cheese, grated (Emmental, Cheddar)
- Salt pepper
- Basil, oregano
And…..
- 200 g Grated cheese
For the spaetzle
- Process all ingredients into a viscous dough with a mixer on the highest setting. Let rest until it starts to bubble lightly (15 minutes). Bring salt water to the boil in a top.
- Place a spaetzle sieve on the pot and pour about 1/3 of the dough onto the sieve (depending on the sieve size). Spread the dough back and forth with a spoon so that it falls like a drop through the sieve into the boiling water. Let boil until the spaetzle float on top, turn down the temperature and let it steep for about 2-3 minutes. Skim off the finished spaetzle and place in a large baking dish (40cmx30cm). Now process the next portion of dough. Continue until the batter is all.

- Put the minced meat in a bowl. Add oil, spices and egg and knead vigorously until a solid mass is formed. Soak the bun briefly in water. Squeeze out and knead well under the amount of meat.
- Heat olive oil (or Rama Culinesse) in a pan, form balls (3-4cm in diameter) out of the meat and add to the pan. Fry the pan vigorously on all sides, then put the balls aside on a plate.

- Grate cheese (or use grated: D). Pour milk and cream over the roasting fat and bring to the boil, stirring constantly. Turn back to medium heat and carefully stir in the cheese little by little until it is completely melted. Season to taste with the spices.
Shape the casserole ^^
- Now put the sauce in the baking dish and mix with the spaetzle. Spread the meatballs evenly on top and then spread cheese on top (if you like). Put it in the oven: middle rack, top / bottom heat at 220 ° C – 20-30 minutes, until the cheese is really brown 🙂
