Cheese Sticks Made from Homemade Curd Puff Pastry

The perfect cheese sticks made from homemade curd puff pastry recipe with a picture and simple step-by-step instructions.

Puff pastry:

  • 250 g Flour
  • 250 g Quark drained in the sieve
  • 250 g Ice cold butter
  • 1 pinch Salt

Cheese sticks / cheese caraway sticks:

  • 1 piece Egg white
  • 100 g Finely grated mountain cheese
  • Caraway seeds
  1. Sift the flour on the worktop and make a well in the middle. Add the drained quark and the butter cut into flakes. Knead everything together quickly (or let the food processor do everything). Immediately put the dough in the refrigerator for 2 hours. To make it go faster, I found a place in the freezer for it.

1. Tour

  1. Roll out the dough into a rectangle on a well-floured surface. Fold the narrow sides towards the middle and roll them out in the opposite direction, i.e. turn the dough by 90 °. Chill again. See also pictures.

2. und 3. Tour und weiter….

  1. In each case: fold the dough, roll it out in the opposite direction, put it in a cool place. After the 3rd tour you now have 8 layers of dough.
  2. I had done a total of 5 tours. 3 is enough for common pastries, but I wanted my cheese sticks to be higher. Proceed with the dough as you would with store-bought puff pastry.

Cheese sticks:

  1. Roll out the puff pastry to about the width of the rolling pin, length: my worktop was not quite enough, the dough was approx. 140 cm long. Brush with the egg white, sprinkle with the cheese and run over it with the rolling pin. This is how the cheese lasts better. Thread out the strips from the narrow side, twist the strips and place them on a baking sheet lined with baking paper. So I processed half of the dough. Bake at 180 ° C for about 10 – 12 minutes.

Cheese caraway sticks:

  1. I also sprinkled the second half with caraway seeds and didn’t twist the strips. I also baked the edge pieces – I had something to snack on. Since the bars are for a party, I had to put them under lock and key after cooling down ;-)))
