Ingredients for 6 servings:
- 300 g wheat flour type 550
- 200 g durum wheat semolina
- 12 g sea salt
- 7 g dry yeast or 21 g fresh yeast
- 1 pinch(s) of sugar
- 290 g water, lukewarm
- 3 tbsp olive oil
- 2 onions
- 5 gherkins
- 2 balls of mozzarella (125 g each)
- 5 slices of processed cheese
- 750 g minced beef
- salt and pepper
- 1 pinch of smoked paprika powder, e.g. Allspiceón de la Vera
- 5 tbsp pizza sauce
- 6 tbsp tomato ketchup
- 1 tsp, heaped mustard, medium hot

Recipe for a large baking tray
For the pizza dough, mix the wheat flour, durum wheat semolina, and sea salt in a large bowl and make a well in the center of the flour. Mix the yeast and sugar in a mug. Gradually add the lukewarm water until the yeast is completely dissolved. Pour the yeast-water mixture into the well with the flour and let it rise for 15 minutes. Add the olive oil and knead the ingredients for 5 minutes, preferably with a hand mixer, until you have a smooth dough. Let the dough rise in a covered bowl for at least two hours. For the topping, roughly dice the onions. Thinly slice the gherkins. Cut the mozzarella balls and the processed cheese slices into small cubes. Place the ground beef in a hot pan. Season with pepper, salt, and a little smoked paprika. Brown without adding any fat over high heat for about 5 minutes, stirring occasionally. Then add the diced onions and cook briefly. Remove the pan from the heat and let it cool. Knead the dough thoroughly again, roll it out onto a large baking sheet, and pull the edges up slightly. Tip: To prevent the dough from sticking and to make it crispier, you can add some durum wheat semolina to the baking sheet before rolling it out. Let the rolled-out dough rise in a warm oven at 30°C (top/bottom heat) for 15 minutes. Spread the pizza sauce evenly over the dough. Mix the tomato ketchup and mustard with the browned ground beef and spread everything over the dough. Then add the pickles and finally the mozzarella and processed cheese cubes. Preheat the oven to 200°C (top/bottom heat) and bake the cheeseburger pizza for about 20 minutes.
