Ingredients for 1 servings:

  • 1 kg quark
  • 1 vanilla pod(s), including the pulp
  • 3 eggs
  • 130 g margarine
  • 100 g corn flour
  • 1 tsp baking powder
  • 750 g banana(s), ripe
  • 400 ml coconut milk

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 1 hour; Total time approx. 4 hours 15 minutes

Mix the quark, cornflour, eggs, baking powder, vanilla seeds, and margarine in a bowl. Finely purée the coconut milk with the bananas to form a smoothie. Stir the smoothie into the bowl and mix everything again vigorously with a mixer. Line a round springform pan (26 cm) with baking paper and grease the sides with margarine. Pour the quark mixture into the pan and bake in a preheated oven at 170°C (convection oven) for about 1 hour. (Caution: if the cake gets too dark, cover it with aluminum foil and continue baking.) Remove the pan from the oven. Let the cake cool slightly, then loosen it from the sides with a knife and let it cool. Decorate the cake as desired with shredded coconut, cocoa powder, etc.
