Cheesecake with apples, without a base à la Städtke

Ingredients for 1 servings:

  • 500 g low-fat curd cheese
  • 500 g cream cheese
  • 1 packet of pudding powder (vanilla flavor)
  • 50 g marzipan paste
  • 50 g ground almonds
  • 20 g desiccated coconut
  • 1 packet of vanilla sugar
  • 5 eggs
  • 1 pinch of salt
  • 1 bottle of rum flavoring
  • 70 g sugar
  • 240 g apples, cut into small pieces
  • 1 lemon(s), the juice
  • Fat for the mold
  • Flour for the mold

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 40 minutes; Total time approx. 3 hours 10 minutes

very quick and tasty

Separate the eggs and beat the egg whites with a pinch of salt until stiff peaks form. Cut the marzipan into small pieces (approx. 2 cm) and place them in a bowl with the remaining ingredients and the desiccated almonds. Mix well, then carefully mix in the apple pieces. Finally, fold in the beaten egg whites. Pour the batter into a greased and floured 26 cm springform pan. Bake in a preheated oven at 175°C for approx. 35 minutes, then brush with egg yolk, sprinkle with desiccated coconut, and bake for a further 5 minutes at 200°C. Let cool in the oven to prevent it from collapsing. For a version without apples, simply omit the apples and use an additional 100 g of sugar.
