Ingredients for 2 servings:
- 1 tbsp butter
- 1 tbsp flour
- ½ cup of cream (approx. 100 g)
- 50 g Cheddar, finely diced or grated
- e.g. milk
- 400 g French fries, frozen
- 50 g Cheddar, grated, for sprinkling
- 3 dashes malt vinegar
- salt and pepper
- nutmeg

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
A pub classic for home
For the cheese sauce, melt the butter in a saucepan, then sprinkle over the flour. Stir to avoid lumps and cook for 2 minutes. Slowly add the cream and stir. Then add the cheese to the sauce, little by little, stirring constantly. Add a little more milk if needed. If the sauce is too thin, add more cheese. Reduce the heat to low. Continue stirring while it bubbles. Season with salt, pepper, and nutmeg. Set aside. Cook the fries in the deep fryer, air fryer, or oven according to the package instructions. Place a layer of fries in each of the 2 bowls and spoon some of the cheese sauce over the fries. Then add another layer of fries on top and spread with the cheese sauce. Finally, sprinkle with grated cheddar cheese. Bake in a preheated oven at 200°C (top/bottom heat) for about 10 minutes. Tip: If you like, you can add a few splashes of malt vinegar to the cheesy chips.
