Cherry casserole with cornflakes

Ingredients for 3 servings:

  • 4 cup(s) cherries
  • 10 tbsp rum
  • 2 tbsp lemon juice
  • 4 eggs
  • 160 g sugar
  • 4 tsp cinnamon
  • 120 g flour
  • 2 tsp baking powder
  • 100 g butter
  • 4 cups cornflakes
  • 50 g nuts, grated or chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cherry Man

Mix the rum and lemon juice, pour over the cherries, and cover. Let stand until ready to use. Beat the eggs with the sugar and cinnamon until frothy. Add the flour, baking powder, and melted butter and mix. Now fold the cherries (including the rum and lemon juice) and cornflakes into the batter. Pour the mixture into a buttered baking dish. Bake at 180°C for approximately 35-60 minutes (this varies depending on the oven, whether conventional or fan-assisted). Allow to cool slightly and serve while still warm with fresh vanilla sauce.
