Ingredients for 1 servings:

  • 1 kg sweet cherries
  • 1 vanilla pod(s) (Thailand)
  • 500 g gelling sugar, 2:1
  • 100 ml Sherry (medium-dry)

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

Pit the cherries, then place them in a saucepan. Scrape out the seeds from the vanilla pod and add them to the cherries, along with the pod itself. Add the gelling sugar to the cherries and let it sit for 3 hours, stirring occasionally. Remove the pod, add the sherry, and bring to a boil for 4 minutes. Pour into prepared twist-off jars. Very, very delicious.
