Cherry marzipan muffins

Ingredients for 12 servings:

  • 200 g marzipan – raw mass
  • 1 jar sour cherries
  • 150 g butter
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 2 eggs
  • 170 g flour
  • 1 ½ tsp baking powder
  • 2 tbsp powdered sugar
  • 25 g chopped pistachios
  • some bitter almond flavor

Working time approx. 15 minutes; Total time approx. 15 minutes

Delicious even for a marzipan hater

Coarsely grate 100g of marzipan. Drain the cherries well. Cream together softened butter, sugar, vanilla sugar, bitter almond flavoring, and salt until fluffy. Add the marzipan and mix well. Beat in the eggs one at a time. Combine the flour and baking powder and stir briefly. Fold the cherries into the batter. Spread the batter into a well-greased, flour-dusted 12-hole muffin tin. Cut 100g of marzipan into small cubes and sprinkle over the batter. Bake in a preheated oven at 155°C (convection oven, preheated) for approximately 25 minutes. Cool thoroughly. Remove the muffins from the tin and sprinkle with powdered sugar and chopped pistachios.
