Cherry-mint jam

Ingredients for 1 servings:

  • 1 ½ kg cherries
  • 10 mint leaves
  • 1 kg gelling sugar

Instructions

Working time approx. 40 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 40 minutes

Wash and pit the cherries. Mix with 1000g of gelling sugar and the mint leaves and let it steep overnight. Bring to a boil the next day until the cherries are soft. Remove the mint leaves. Purée thoroughly with a hand blender or pass through a food mill. Bring to a boil again with the remaining 500g of gelling sugar, stirring occasionally. After 3 minutes of boiling, pour into jars. It’s especially nice to add a mint leaf to each jar. Gently press it in with a clean fork. Seal the jar.
