Cherry semolina casserole

Ingredients for 4 servings:

  • ½ liter of milk
  • 65 g margarine
  • 1 pinch of salt
  • 200 g semolina
  • 4 eggs
  • 125 g sugar
  • 1 jar morello cherries

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Separate the eggs. Drain the cherries thoroughly. Bring the milk to a boil with the margarine and a pinch of salt. Then sprinkle the semolina into the milk and stir until the mixture starts to move away from the bottom of the pan. Whisk the 4 egg yolks with the sugar until frothy and mix into the semolina mixture. Beat the 4 egg whites until stiff peaks form and carefully fold into the mixture. Now gently fold in the drained cherries. Pour the mixture into a baking dish and bake at 175°C on the second rack from the bottom for about 60 minutes.
