Cherry Tiramisu Cake

Ingredients for 1 servings:

  • 4 eggs
  • 125 g sugar
  • 2 vanilla sugar
  • 1 pinch of salt
  • 100 g flour
  • 50 g cornstarch
  • 1 tsp baking powder
  • 1 jar of cherries (sweet or sour cherries)
  • 750 g mascarpone
  • 750 g quark (low-fat quark)
  • 4 tbsp lemon juice
  • 25 ladyfingers
  • 1 tbsp cocoa powder

Instructions

Working time approx. 1 hour 30 minutes; Rest time approx. 1 hour; Total time approx. 2 hours 30 minutes

Separate the eggs, beat the egg whites until stiff, then add 125g sugar, 1g vanilla sugar, and salt. Beat in the egg yolks, sift in the flour, cornstarch, and baking powder, and fold in. Bake in a springform pan lined with baking paper at 170°C for approx. 25 minutes. Mix together the quark, mascarpone, 175g sugar, and lemon juice. Then take 1/4 of the cream and chill. Fold the cherries into the remaining cream. Cut the cooled sponge cake base in half horizontally. Place a cake ring around the bottom layer. Spread the cherry-mascarpone cream on top and place the second layer on top. Spread the remaining cream on top, loosen the cake ring, press the sponge fingers onto the edge of the cake, and dust with cocoa.
