Cherry yogurt ice cream with fruit swirl

Ingredients for 4 servings:

  • 500 g cherry(s), pitted
  • 250 g yogurt
  • 75 g sugar
  • 1 tbsp honey
  • 3 tbsp Cointreau
  • 1 egg white

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 45 minutes

Puree the cherries with the sugar and a little Cointreau. Whisk the yogurt and honey until creamy and add about 3/4 of the cherry mixture. If you like, you can fold in a stiffly beaten egg white. Chill the mixture. Then freeze the ice cream mixture in the ice cream maker. Stir an additional 1-2 tablespoons of Cointreau into the puree. The alcohol prevents it from freezing completely. Pour the frozen ice cream mixture into a container. Occasionally add a few dollops of the puree. Finally, lightly marble it with a fork and finish freezing in the freezer.
