Chia protein pudding

Ingredients for 2 servings:

  • 20 g chia seeds
  • 60 g oat flakes
  • 200 ml coconut drink, unsweetened
  • 5 drops of liquid Stevia
  • 125 g low-fat curd cheese
  • 2 cups of yogurt, 0.1% fat
  • ½ tsp honey
  • 120 g berries or fruits of your choice and season
  • 10 g protein powder to taste, e.g., yogurt-peach
  • some vanilla pulp

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Total time approx. 40 minutes

Combine chia seeds, oat flakes, coconut milk, and liquid stevia and let it sit for at least half an hour. It’s easier to mix the ingredients the night before and simply let them sit in the refrigerator overnight. Stir the low-fat quark, yogurt, egg white powder, vanilla extract, and honey until smooth. Layer the chia pudding and yogurt mixture in glasses, alternating layers. Garnish with fruit, if desired. 350 kcal per serving.
