Chia Pudding with Blueberries

The perfect chia pudding with blueberries recipe with a picture and simple step-by-step instructions.

  • 400 g Unsweetened coconut milk
  • 150 ml Sparkling water
  • 4 tbsp Rice syrup
  • 0,5 tsp Vanilla essence
  • 70 g Chia seeds
  • 100 g Blueberries fresh
  • 2 tbsp Pumpkin seeds
  • 1 tbsp Coconut shavings
  1. The day before, stir together coconut milk, mineral water, rice syrup, vanilla essence and chia seeds, soak for 20 minutes and stir well again.
  2. Fill the chia pudding into 4 glasses and cover and leave to soak in the refrigerator overnight.
  3. The next day wash the blueberries and pat dry. Sprinkle the chia pudding with the blueberries, pumpkin seeds and coconut shavings and serve.
