Chia seed and raspberry layered snack for breakfast or in between meals

Ingredients for 1 servings:

  • 3 tbsp chia seeds
  • 80 ml almond milk (almond drink) or other milk
  • 50 g raspberries, frozen
  • 5 nuts of your choice (e.g. almonds, walnuts…)
  • 3 tbsp Greek yogurt
  • 1 tsp, saturates xylitol (sugar substitute), or sugar or other sweetener
  • 1 banana(s)
  • Chia seeds or raspberries, for decoration

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

It’s best to let the chia seeds soak in the almond milk for two hours beforehand (although one hour is also sufficient). Combine the raspberries, Greek yogurt, nuts, and sweetener in a blender and blend until smooth. Chop the banana. Now you can layer the chia pudding, raspberry cream, and banana pieces as desired. Finally, top with a little decoration, such as some chia seeds or a few raspberries.
