Lemon muffins with white chocolate

Ingredients for 1 servings:

  • 200 g flour
  • 150 g sugar
  • 100 g butter or margarine
  • 1 egg(s)
  • 1 packet of vanilla sugar
  • 1 packet of baking powder
  • 2 packets of lemon peel or 2 tsp lemon paste
  • 2 dashes lemon juice
  • 100 ml milk
  • 50 g white chocolate

Instructions

Working time approx. 30 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 10 minutes

Preheat the oven to 180°C (top/bottom heat). Combine the flour, sugar, butter, egg, baking powder, vanilla sugar, lemon zest/paste, lemon juice, and milk in a mixing bowl. Mix with a hand mixer first on the lowest speed, then on the highest speed until a smooth batter forms. Add more milk if necessary until the batter has a thick consistency. Chop the chocolate (or use white chocolate shavings or similar) and then fold it into the batter. Divide the batter among 12 muffin cups and bake on the middle rack of the oven at 180°C for about 20-25 minutes. After baking, let the muffins cool for about 15 minutes.
