Leek salad with raisins

Ingredients for 2 servings:

  • 1 stalk(s) leek
  • 100 g raisins
  • 50 g almonds, peeled and stalked
  • 4 tbsp olive oil
  • 2 tbsp vinegar (honey or apple cider vinegar)
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Halve the light green and white parts of the leek lengthwise, wash thoroughly under running water, shake dry, and cut into fine strips. Set the leek aside in a bowl. Heat 1 tablespoon of oil in a pan and toast the almonds and raisins. Pour the warm mixture over the fine leek strips in the bowl to let everything marinate for a while. Then stir in the remaining olive oil, pepper, and salt, and season the salad with honey vinegar.
