Chicken breast fillet in kiwi sauce

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • 20 g butter or margarine
  • 3 kiwis
  • 75 g cream, sweet
  • Salt
  • pepper
  • Roasted almond flakes (for garnishing)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Rinse the chicken breast fillets, pat dry, and season with pepper. Heat the fat in a pan and fry the fillets until golden brown on both sides. Peel the kiwis, coarsely chop, and puree. Remove the fillets from the pan, season with salt, and keep warm. Stir the kiwi puree into the pan juices, bring to a boil, stir in the cream, reduce heat to low and simmer, then season to taste. Slice the meat diagonally, arrange on warmed plates, pour over the kiwi sauce, and sprinkle with flaked almonds. Serve with rice and leaf salad.
