Chicken breast fillets with spinach topping

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • 2 can/n tomatoes, chopped
  • 3 tbsp Italian herbs, fresh, chopped
  • 1 onion(s)
  • 1 garlic clove(s), chopped
  • 2 tsp honey
  • 2 tsp sambal oelek
  • 100 g creamed spinach
  • 1 egg yolk
  • 5 tbsp Parmesan, freshly grated
  • 3 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sear the chicken breast fillets in 2 tablespoons of hot olive oil until light brown and season with salt and pepper. Transfer to a plate and set aside. Peel and chop the onion, then fry in the hot pan. Add the chopped tomatoes and herbs, season with honey and a little sambal oelek if desired. Let it simmer slightly. Mix together the creamed spinach, egg yolk, Parmesan cheese, and chopped garlic clove and spread everything on the fillets. Pour the tomato sauce into an ovenproof dish and place the chicken breast fillets on top. Bake in a preheated oven at 225°C for about 10 minutes. Serve with baguette, which can be briefly warmed in the hot oven.
