Chicken breasts topped with sour cream and pesto sauce

Ingredients for 4 servings:

  • 4 chicken breasts
  • 1 cup sour cream
  • 1 jar red pesto
  • 1 jar bell pepper(s), roasted
  • 1 clove(s) garlic
  • little cream, milk or coffee cream
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Drain the roasted bell pepper pieces on a paper towel and place them in a baking dish. Place the chicken breasts on top and cut them a few times (not all the way through) with a sharp knife. Sprinkle the chicken breasts lightly with salt and pepper. In a bowl, combine the sour cream and pesto and add the garlic (very finely chopped or pressed). Mix everything well. If you want this mixture to be a bit more runny, you can mix in a little cream, milk, or coffee cream. Then spread the mixture over the chicken breasts, including the cuts. Bake in the oven (approx. 200°C) for approx. 20-25 minutes. Serve with rice or pasta.
