Ingredients for 2 servings:
- 500 g chicken breast
- 300 g Kritharaki (rice-shaped noodles)
- 3 sprigs rosemary
- 500 ml vegetable broth, clear
- 20 ml oil
- salt and pepper
- paprika
- 500 ml yogurt, 0.1% fat
- Parsley
- chives
- basil
- oregano
- savory
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes
Mix a marinade of oil, salt, pepper, and paprika. Brush the chicken breast with the marinade, then place it in a baking dish. Arrange the rosemary sprigs on top and place the dish in the oven. Bake at 180°C fan-assisted oven for 15 minutes. Then place the kritharaki among the chicken pieces and pour over the vegetable stock. Cook for another 20 minutes at 180°C fan-assisted oven. Mix the yogurt with the herbs and spices and pour it over the chicken breast and kritharaki, ensuring it completely covers everything. Set the oven to 200°C fan-assisted oven and bake for 10 minutes. 1013 kcal per serving.
