Preheat the oven to 220°C. Mix the flour and paprika well. Wash and pat dry the chicken thighs. Then season with salt and pepper and coat in the flour. Layer the thighs in a non-stick pan. Spread the crème fraîche evenly over the top. Sprinkle 1/2 package of grated Emmental cheese over the top and cover the pan with aluminum foil. Place the pan in the preheated oven for 15 minutes, then remove the foil. Reduce the temperature to 180°C and bake for another 20 minutes. Sprinkle the remaining 1/2 package of Emmental cheese over the top and bake for another 10 minutes at 220°C until crispy. Season the balsamic vinegar with salt, a pinch of sugar, olive oil and a little water. Meanwhile, clean, wash and spin dry the lettuce. Then drizzle with the dressing. Arrange the dressed salad on plates, top with the chicken thighs, and sprinkle with chives. Serve immediately.
