Chicken with Mushrooms

The perfect chicken with mushrooms recipe with a picture and simple step-by-step instructions.

  • 1 Pc. 1.2 kg roast chicken or pieces of chicken
  • 300 g Mushrooms e.g. 100 g each of king oyster mushrooms, oyster mushrooms, brown mushrooms.
  • 150 ml Dry red wine
  • 2 cl Brandy de Jerez
  • 40 g Leek cubes cleaned
  • 30 g Spring onions, cleaned and diced
  • 100 g Fine diced carrots
  • 2 Pc. Finely diced cloves of garlic
  • 1 Pc. Tomato fresh, peeled, pitted, diced
  • 120 ml Extra virgin olive oil
  • 6 Pc. Sage leaves, finely chopped
  • Salt
  • Black pepper from the mill
  1. Let the olive oil get very hot in a saucepan. Fry the divided chicken or chicken pieces in it all around until golden brown. Remove. Season with salt and pepper.
  1. Sauté the leek, onion, carrot and garlic cubes in the same oil with the tomato cubes. Season with salt and pepper. Add the sage and the chicken pieces. Let simmer for about 15 minutes. Pour brandy over and flambé, add red wine and simmer for another 20 minutes over low heat.
  1. While the chicken is braising, clean the mushrooms and cut into bite-sized pieces. 10 minutes before the end of the cooking time, add the mushrooms to the chicken, mix well and cook until done. Season to taste and serve with a baguette. If the chicken pieces are cut small enough, this dish can also be served as a tapa.
