Chickpea and Feta Salad

The perfect chickpea and feta salad recipe with a picture and simple step-by-step instructions.

  • 1 pack Feta
  • 400 g Canned chickpeas
  • 100 g Dried organic soft tomatoes
  • 0,5 tsp Chilli flakes
  • 0,5 tsp Dried oregano
  • Freshly ground black pepper
  • 1 tbsp Lemon juice
  • 1 tbsp Light balsamic vinegar
  • 3 tbsp Extra virgin olive oil
  • N. B. some cress or chopped parsley
  1. Dice the feta, drain the chickpeas, cut the soft tomatoes into cubes or strips. Mix everything. For the dressing mix the remaining ingredients and pour over the salad. Mix everything together well and let it steep at room temperature for at least 1 hour before serving.
