Chickpea Salad with Feta

Ingredients
 

  • 1 Red Onion
  • 1 Cucumber
  • 150 g Feta
  • 5 stem Fresh smooth parsley
  • 150 g Clam noodles
  • 1 big can Chickpeas
  • 4 tbsp Lemon juice
  • Salt
  • Pepper
  • 1 tsp Sugar
  • 5 tbsp Olive oil
  • 0,5 tsp Dried chilli flakes
  • Water

Instructions
 

  • First, remove the skin from the red onion and cut into fine rings. Peel the cucumber, quarter and core lengthways and cut into pieces approx. 1 cm wide. Put everything in a relatively large bowl. Then crumble the feta cheese and add it to the bowl. Add the parsley, which has been roughly chopped. Cook the clam noodles in plenty of salted water according to the instructions on the packet, drain and immediately add to the other ingredients in the bowl while still dripping wet. Now drain the chickpeas in a colander and add them to the bowl with the other ingredients.
  • The dressing: Prepare a dressing from the lemon juice, 2 tablespoons of water, salt, pepper and 1 teaspoon of sugar, which is then whipped up with 5 tablespoons of olive oil. Pour the dressing over the other ingredients and mix gently. Finally, the chilli flakes are added and the oriental salad is ready.
