Chickpea cookies

Spread the love

Ingredients for 1 servings:

  • 240 g chickpeas
  • 35 g protein powder
  • 1 egg(s)
  • 70 g erythritol (sugar substitute)
  • ¾ tsp baking powder
  • n. B. Speculoos spice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 33 minutes

Low-carb / fitness food

Puree the chickpeas and mix with the other ingredients to form a slightly thick batter. It should be sticky. Place about 20 cookies on a baking sheet and smooth them out slightly, if desired, or leave them in piles. Bake at 175 degrees Celsius (350 degrees Fahrenheit) for 15-18 minutes with fan-assisted oven. Variations: You can also sweeten with xylitol (a sugar substitute), stevia, or regular sugar. Season with cinnamon, vanilla, orange zest, or cocoa powder (if using cocoa powder, add a little more sweetener). Mixing with nuts, chocolate chips, cocoa nibs, or coconut flakes gives the cookies more crunch. You can replace the protein powder with a little flour, otherwise any protein powder from the supermarket will do, although I generally prefer a higher quality one. With the ingredients listed in the ingredients list, 1 cookie has about 30 calories.
