Chicory Caramelized in Maple Syrup

The perfect chicory caramelized in maple syrup recipe with a picture and simple step-by-step instructions.

  • 2 St Chicory
  • 1 St Onion [small, cut into 1/2 rings]
  • 50 ml Maple syrup
  • 1 tbsp Sugar
  • 1 tbsp Salt
  • Rapeseed oil
  • 100 ml Vegetable stock or stock
  1. Quarter the chicoree and cut out the stalk, separate the leaves
  2. Briefly liquefy the sugar in the pan, sweat the onion rings without them turning color
  3. Whisk the maple syrup with the vegetable stock and heat (add salt to taste)
  4. Add chicory leaves and maple syrup and cook with constant swirling
  5. Arrange on the plates as a bed

garnish

  1. Place the desired and prepared meat side dish on it. With us rump steaks. Serve with risotto.
