Chicory Caramelized in Maple Syrup
The perfect chicory caramelized in maple syrup recipe with a picture and simple step-by-step instructions.
- 2 St Chicory
- 1 St Onion [small, cut into 1/2 rings]
- 50 ml Maple syrup
- 1 tbsp Sugar
- 1 tbsp Salt
- Rapeseed oil
- 100 ml Vegetable stock or stock
- Quarter the chicoree and cut out the stalk, separate the leaves
- Briefly liquefy the sugar in the pan, sweat the onion rings without them turning color
- Whisk the maple syrup with the vegetable stock and heat (add salt to taste)
- Add chicory leaves and maple syrup and cook with constant swirling
- Arrange on the plates as a bed

- Place the desired and prepared meat side dish on it. With us rump steaks. Serve with risotto.
