Chicory salad with blue cheese, grapes and walnuts

Ingredients for 2 servings:

  • 2 chicory
  • 1 romaine lettuce
  • 1 handful of grapes, dark
  • 220 g blue cheese
  • 2 tbsp goat yogurt
  • 1 orange(s), juice
  • ½ lemon(s), zest and juice
  • 1 tbsp walnut oil, roasted
  • 2 tbsp olive oil
  • 2 tsp mustard, medium hot
  • 1 tsp honey
  • 1 pinch(s) of salt and pepper
  • 75 g walnuts, roughly chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with fresh orange dressing

Wash the chicory, cut into bite-sized pieces, and place in a salad bowl. Shred the romaine lettuce, wash it, spin it dry, and add it to the chicory. Wash the grapes, halve them, and add them to the salad. For the dressing, cut the blue cheese into small pieces and mix with the remaining ingredients. Add the dressing to the salad just before serving.
