Chicory salad with grapefruit and yogurt sauce

Ingredients for 2 servings:

  • 3 chicory
  • 1 grapefruit(s), pink or yellow
  • 1 cup of natural yogurt
  • 1 tsp coriander powder
  • 1 tbsp brown sugar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash the chicory and cut into strips about 0.5 cm wide. Peel and fillet the grapefruit, then cut the segments into pieces, making sure to reserving the juice! Mix the grapefruit juice with the yogurt, coriander, and sugar to make a salad dressing. Mix the chicory strips and grapefruit pieces and serve with the sauce. Tip: Pink grapefruit generally tastes a bit more delicate than yellow grapefruit.
