Chili Con Carne Mediterranean

- 500 g Ground beef
- 1 Red onion
- 250 g Jerusalem artichoke fresh
- 400 g Orange sweet potatoes
- 300 g Eggplant fresh
- 200 g Fresh leek
- 500 g Red peppers
- 300 g Fennel fresh
- 500 Milliliters Sieved tomatos
- 300 g Paprika pulp (Ajvar)
- 250 g Corn
- 250 g Canned kidney beans
- 0,25 liter Red wine medium quality wine
- 3 tablespoon Harissa paste
- 2 Red chilli pepper
- 1 tablespoon Cane sugar
- 1 teaspoon Dried thyme
- 200 g Cream 30% fat
- Wash the vegetables, clean and dice them.
- Fry the minced meat with the cane sugar until crumbly.
- Add 2 tablespoons of ajvar and let it caramelize slightly.
- Add the onion, thyme chilli and the fennel and stew with a cup of water for about 10 minutes.
- Then add 1 liter of water, the ajvar and the tomato sauce. Let simmer for 10 minutes.
- Simmer with the remaining vegetables and wine for another 20 minutes.
- Add the cream and season with salt and pepper.
