Chili relish

Ingredients for 4 servings:

  • 100 ml olive oil
  • 2 pointed peppers
  • 2 onions, red
  • 3 red chili peppers
  • 300 g cherry tomatoes
  • 100 g sugar
  • 70 ml fish sauce

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 50 minutes

Roughly dice the onions, bell peppers, and chilies. Heat olive oil in a pan and sauté the diced ingredients over medium heat for about 20 minutes, stirring occasionally. Quarter the tomatoes, add them, and simmer for another five minutes. Stir in the sugar and fish sauce until smooth. Mash the relish with a fork and let it cool or bring it back to a boil. Pour into clean jars and seal immediately.
