- 4 chili peppers (red Thai chilies)
- 3 garlic cloves
- 3 tbsp fish sauce
- 50 g tomato paste
- 20 g honey
- Coriander leaves, fresh, alternatively parsley

A fiery alternative to boring ready-made barbecue sauces
Finely chop the garlic and chilies. (Caution: Thai chilies are very hot! If you prefer a less spicy dish, either use fewer chilies or remove the seeds.) Place the fish sauce, garlic, and chilies in a container. If you have time, let it sit for 1-2 hours. This brings out the chili’s spiciness and garlic better. Chop a handful of cilantro or, to taste, parsley. Mix in the tomato paste, honey, and coriander. Season with pepper and, if it’s too salty, fish sauce. It’s best to let it sit overnight.
