Ingredients for 1 servings:

  • 180 g sugar
  • 200 g margarine, vegan
  • 2 tsp vanilla extract
  • 1 tbsp soy flour
  • 2 tbsp water
  • 250 g flour
  • 3 tsp, heaped cornstarch
  • 1 tsp, leveled baking powder
  • 1 pinch of salt
  • 300 g dark chocolate, vegan, e.g. block chocolate

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Mix the flour with the starch, baking powder, and salt. Chop the chocolate with a knife. In another bowl, beat the margarine and sugar until fluffy. Then stir in the soy flour mixed with the water (replaces one egg) and the vanilla extract. Stir in the flour mixture, followed by the chocolate. Shape the finished dough into walnut-sized (or slightly larger) balls, place them on the baking tray, leaving enough space between them, and flatten slightly. Bake the cookies at 180°C (convection oven) until the edges are lightly browned (normally takes at least 10 minutes). Remove the cookies from the oven and leave them on the tray for about 5 minutes.
