Chocolate Mint Muffins

  • 3 piece Eggs size M
  • 200 g Zucchini green
  • 220 g Flour
  • 1 pinch Salt
  • 2 teaspoon Baking powder
  • 100 g After eight tablets
  • 3 teaspoon Cocoa powder
  1. 1. Mix the eggs with the sugar until the mixture is light and creamy. 2. Peel and roughly grate the zucchini. Add the pieces to the egg mixture and mix everything well. 3. Mix the flour with the baking powder and a pinch of salt. Mix all ingredients together well. 4. Warm up the after-eight tablets or let them melt slightly. I put them in the microwave for a very short time. Add the chocolate to the muffin batter together with the cocoa powder, stir in briefly and distribute on the molds. 5. Bake the chocolate muffins for about 30 minutes at 180 degrees. They taste very good on their own, but can also be dusted with cocoa powder or decorated with a chocolate topping.
