Chocolate mousse

Ingredients for 4 servings:

  • 3 egg whites
  • 2 cups of cream (200 ml each)
  • 3 egg yolks
  • 200 g dark chocolate

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Melt the chocolate in a bain-marie over low heat or carefully in the microwave (at about 400 watts) and let it cool slightly. Beat the egg whites until stiff peaks form. Whisk the cream until stiff peaks form. Beat the egg yolks until frothy. Add the melted chocolate. The mixture will now be quite thick. Add about 1 tablespoon of the stiff peaks and the cream and mix with a hand mixer. This will make everything a little smoother again. Now fold in the remaining egg whites and the cream. Pour into a bowl and refrigerate overnight.
