Chocolate mousse

Ingredients for 8 servings:

  • 4 egg yolks
  • 2 tbsp water, hot
  • 60 g sugar
  • 200 g dark chocolate, e.g. Ritter Sport semi-sweet
  • 4 egg whites
  • 200 g sweet cream
  • 4 tbsp coffee or cognac, as desired, not necessary

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Chocolate mousse

Beat the egg yolks and water until light and fluffy (using an electric mixer). Sprinkle in the sugar and beat until dissolved. This can take about 10-15 minutes! In the meantime, melt the chocolate in a double boiler. Make sure there are no lumps left in the chocolate, otherwise you’ll taste them later. Stir the chocolate into the egg yolk cream (I do this all with a mixer) and add 4 tablespoons of cognac or 4 tablespoons of liquid coffee, if desired. Beat the egg whites until stiff peaks form and fold into the cream. Whip the cream until stiff peaks form and fold in. Chill. The mousse needs about 1 hour to set. Delicious!
