Ingredients for 4 servings:
- 250 ml milk
- 250 ml cream
- 125 g sugar
- 6 eggs, separated
- 1 half vanilla pod(s)
- Powdered sugar or sugar, for sprinkling
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Mix the milk and cream, scrape out the vanilla pod and add it. Preheat oven to 125 degrees Celsius. Bring the milk, cream and vanilla mixture to a boil, while mixing the egg yolks with the sugar. Add the cooked milk, cream and vanilla mixture to the egg mixture while stirring (only in this order, otherwise the egg will curdle immediately). Pour the mixture into an ovenproof dish and place it in a water bath in the oven (e.g. a casserole dish with a little water). Leave the mixture in the oven for about 35 minutes until the top layer has set slightly, then let it cool. Finally, sprinkle sugar or powdered sugar on the top layer and caramelize the sugar using a Bunsen burner or in the oven with top heat. The crème brûlée should still be cold on the bottom, but the top caramelized layer should be hot.
