Chocolate – Muesli – Cookies

Ingredients for 1 servings:

  • 1 cup of muesli (chocolate)
  • 1 cup desiccated coconut
  • 1 cup flour
  • ½ cup sugar
  • 1 tsp baking powder
  • 120 g butter or margarine
  • 2 tbsp honey or maple syrup

Combine chocolate muesli, desiccated coconut, flour, sugar, and baking powder in a bowl. Melt the butter (also works in the microwave), mix it with the syrup or honey, and add it to the dry ingredients. Knead everything together using a mixer fitted with a dough hook. Using a cookie scoop or two spoons, place small portions (about the size of a walnut) onto a baking sheet lined with parchment paper. Bake at 150-160°C (convection oven) for about 20 minutes. Let cool on the baking sheet. Very versatile: Instead of desiccated coconut, you can also mix in oat flakes, chocolate chips, ground nuts, or even raisins or cranberries. Your imagination and taste are the limit.
